I’m always posting meals I come up with, particularly photos, on Facebook. I’ve decided that, by sharing them here, I can tag them and refer to them later.
Tonight we had baked chicken breast, marinated overnight in Trader Joe’s Cilantro Salad Dressing. Did you know Coriander and Cilantro are the same thing? I did not! I blended Jasmine Rice (love the aroma and kids do prefer a white rice) and a mixed brown rice. Complimented by a spring salad (adults added red pepper and scallions) with Annie’s Raspberry Vinaigrette (kids cannot get enough).
The highlight was when both kids wanted seconds on the baked chicken, *slam dunk*. I personally added a glass (second pending after this post) of a recommended red table wine made with organic grapes and available at Trader Joe’s for the remarkable price of $3.99 per bottle. It is the Green Fin Red Table Wine 2010, and it’s not bad. Sweet and will be perfect for a Summer Sangria (stay tuned for that recipe or image in the future).
